#LocalBite Mini Challenge – Week Three

I have a confession to make:

Despite my great intentions last week, I simply was not able to push a few seeds into the soil.

Utter failure.

I could blame to 100* days or my exhaustion or the sickness that has plagued our house for a month now or the fact that the acequia is completely dry or the massive amount of weeds I’m tackling in the garden or any number of other things…

But it all boils down to the fact that I just didn’t get a single seed in the ground last week.

I am hoping (and intending) to do better going forward and have my fingers crossed that my brother will come out this weekend and help us get caught up on a few things around the property.

Now, how did you do? Surely you were able to do better than I!  Do tell, what did you sow?

Your challenge this week is to create an entire meal using only locally sourced items!

Now, please don’t panic! I know we’re still early in the challenge, but you’ve got this 🙂

You can pick any meal you’d like; breakfast, lunch, or dinner.

Your meal can be as simple or as complicated as you like, just as long as it is 100% locally sourced!

  1. Well I didn’t sow any seeds but I have been meaning to get some beans going. I DID install 110 feet of plastic fencing around around the big vegetable garden. So far it is doing it’s job and keep the marauding deer out (There are hoof prints all along the outside perimeter, ha!)

    I bought spinach and strawberries from the local farmstand. I made a Strawberry, Spinach, Feta and Almond salad with grilled chicken and berry poppyseed vinaigrette. It was scrumptious! I think I could eat it every day 🙂

    1. Good for you for getting that fencing up! Silly creatures always thinking our hard work is just for them!!!

      Your salad sounds absolutely divine!

      I have to admit, I’m totally behind on this challenge…like averaging a week behind! I’ll pull together a post in the next day or so with this week’s challenge but am feeling like such a slacker!!!
