Hatch Green Chile Recipe

There are plenty of green chile recipes floating around the internet and, of course, everyone has their opinion about what the “must” ingredients are to add to the pot. I tend to prefer to keep my chile as simple as possible, which I believe, allows the flavors of the actual green chile to come through as opposed to being masked by any other flavors.

Now, depending on the state of your chile when you get it (fresh, roasted, roasted and frozen whole or roasted and frozen peeled and chopped), there might be some work to do before you can actually get it in the pot. However, since we’re going to keep this as simple as possible, let’s assume that your green chile is either:

  1. roasted, peeled, chopped and fresh OR
  2. roasted, peeled, chopped and frozen.

What ingredients do I need?

Now what?

  • Throw all of your ingredients in a pot (yes, even if the chile is frozen, just throw it in the pot) over medium heat
  • Simmer 30-45 minutes (don’t boil it, just simmer it)
  • Spoon it over your favorite dish (enchiladas, burritos, nachos, tacos…) or into your favorite stew (green chile stew? Oh yeah!)

Want to get a bit fancier?

  • Want it a bit thicker? Take half of your chile and liquids out of your pot and throw it in the blender for a few seconds, then add it back into the pot
  • OR Add in a bit of Arrow Root or Cornstach OR
  • OR Gently brown a bit of flour in a pan (over low heat), then slowly wisk it into your green chile
  • Want a bit of protein? Brown some beef or pork (ground or stew meat) and add it in to the chile

That’s it!  Super simple, incredibly delicious!  Make some fresh, homemade tortillas and enjoy!
