Independence Days

Here’s my very first Independence Days post!  I’ve found that I’ve struggled a bit with what should actually be written here for a couple of reasons.  1) There are things we have gotten in the habit of doing and now we just do them without really thinking about it.  This is a good thing, no doubt, and interesting to reflect on.  2) I’ve also found a little piece of competitive spirit with…myself!  These posts are supposed to be about feeling positive about what’s been accomplished and I’ve found that I’ve spent some time thinking about more than a few things that I didn’t get done this week that I wanted to.  There’s always next week, right?


Anyhow, here goes… 

Plant something: Nothing this week.  I’m intentionally trying not to put seeds in dirt every day.  This might have to change this weekend though 😉

Harvest something: 
Spinach = 1.5 ounce
Mixed Greens = 1.5 ounce
Kale = .5 ounce
Eggs = 18


Preserve something: 
7 quarts of pintos beans (pressure canning rocks!)

Waste not: 
Besides our everyday food scraps going out to the chickens and the compost, we have lots of egg shells that are currently being saved to be crushed and added to some of our soil when it’s transplanting time later in the spring.  Calcium anyone?


Want Not:
64 pounds of local beef into our chest freezer!

Eat the Food: 
2 quarts of home canned pinto beans
1/2 pint of pickled beets
1/2 pint lemon basil jam
Frozen lasagna (we like to make large meals, portion them out and freeze some for quick work lunches)
Pancakes (same as lasagna, but a quick breakfast instead)

   
Build community food systems: 
Not sure if this counts (I hope it does) but I sent out several packets of saved seeds this week.  Not only do I love saving seeds, but I absolutely adore giving them away and imagining them  providing a bountiful harvest for someone else miles and miles away 🙂

Skill up:  
I won’t count this every week, maybe only if something exceptionally helpful pops up, but…I started classes again this week!  Living with Loss:Studies in Grief and Transitions, Ecology and Literature for a Living Planet.  This should make for an interesting semester 🙂

A note: To avoid confusion, I will post my Harvest Monday harvests as the harvest part of this challenge for now.  I might figure out a new pattern as we go, but for now, this will work.

  1. I think sending packets of saved seeds definitely counts! Your restraint vis a vis seed planting is admirable.

  2. Pressure cooking does rock. Scratch beans are nice. Still bitter about completely destroying a cooktop range from a frothing over pressure cooker several days ago when that lovely liquid crept into the electronics to make a lovely spasm of colors and odors! 🙂 May you fend better than I.

    1. Oh no! I’m sorry to hear about the frothing of your beans and the ruining of your stove! No good! Do you know what went wrong?
