Happy Martin Luther King, Jr. Day everyone!
This weeks harvest includes more greens from under our grow lights, a bit of spinach from our hoop houses/wagons and a little extra bonus!
Yep…you guessed it…our chickens have begun laying eggs again. I mean, really laying eggs…not the whole one every few days bit we’ve been struggling with for what feels like forever! I’m so excited! Their whole molting misery must be over! WooHoo!!! In honor of the Ladies, I’ve also decided that I will include our weekly egg totals with our harvest totals…it is a harvest, after all, isn’t it? 😉
This weeks totals:
- Mixed greens = 3 ounces
- Spinach = 1 ounce
- Eggs = 22

Glad your girls are producing again. We haven’t hit our first molt yet. I don’t know what we will do when we don’t have our 2-3 dozen eggs a week.
We’re glad about it, too 🙂 My advice to you is to freeze some of your eggs while they’re in abundance, then you’ll have some when the Ladies slow down. We didn’t do that last summer and have definitely learned our lesson!

Hurrah for the molting being done! We have two that are definitely molting at the moment so our egg production has really dropped but still getting enough to keep us adequately supplied for typical usage levels. The greens look yummy!

Bee Girl nice harvest. When you have an over abundance of eggs have you ever tried freezing them for when the ladies decide to take a rest? I have been doing it when I can get eggs on sale really cheap. The work just fine even for a scrambled egg.
I haven’t tried that yet, but I do intend to this year! It really is amazing, the ebb and flow of it all! we were giving away so many eggs this summer, and then were left with none for a while this winter! We will definitely plan better now that we know 🙂 I would think you can use the frozen eggs for scrambled eggs, omelettes, quiche and baking, right? As long as I measure them out?
I actually buy medium eggs that are the usually on sale at a ridiculously low price, beat them all together then put them in 2 oz containers to freeze. That is equivalent to a whole egg. If you go to my blog under How Frugal Are You, that is where I posted about it and yes they do make good scrambled eggs.
