Harvest Monday

Happy Monday (and Memorial Day), everyone!

We spent a lot of time in the garden yesterday trying to get as much done as possible before the onslaught of summer really begins.  While everything is planted out much sooner than it was last year at this time, I just can’t seem to shake this overwhelming urge to get everything in the ground “right now”!

So, I’m clearing the last remaining spaces as quickly as possible, sticking seeds in tiny holes left by over-wintered veggies and trying my best to be patient while those same over-wintered veggies finish up going to seed (kale, beets, carrots, turnips and radishes).

While waiting patiently for the peas and strawberries to be ready, I’m still nursing along 2 kale plants that I’m only pulling from when necessary.  I also had my very first rhubarb harvest of the year yesterday!  This harvest is especially exciting since it’s our first real rhubarb harvest ever (I think we got one stalk last year, which doesn’t really count, does it?)!   Our rhubarb has been so much happier in the ground than it ever was in the big pot we used to have it in!

The rhubarb was used to make the most delicious galette ever (I’ll post about this tomorrow) and the kale was thrown into some veggie fried rice along with random veggies we had on hand and a few sprigs of carrot tops!  Pretty good, if I do say so myself 😉

I must say, I am very excited about this season and all of the promise growing happily in the garden!

  • Rhubarb = 12 oz
  • Kale = 1 oz
  • Eggs = 19 eggs

    I love rhubarb too, so I would have been equally as excited with that harvest, well done. A friend of mine gave me a jar of a rhubarb chutney which goes well with pork apparently.

      Ooohhh…rhubarb chutney!? That sounds delicious! I am hoping to experiment with a variety of jams and chutneys this year (as well as regular ol’ canned veggies and condiments)! Don’t you just love food gifts?

    Thrilled to see your RED rhubarb…mine only had green stalks…then this year NO stalks…have no idea what happened! I will be replanting in the Fall. This time, hopefully I’ll have the RED stalked variety! You’ve had a lovely harvest!

      Sorry to hear your rhubarb didn’t produce this year! Bummer! I wish I could help you with what happened, but we’re newbies to the rhubarb world 🙂 I hope your next planting is full of beautiful RED stalks!!!

      Oh man…I’m sure there’s lots of starting over being done…still! Will rhubarb grow there?

    And your stalks have red ends to them. Mine are green, green, and green. I bought a variety that said it would be red. No such luck. At least it still tastes good and it grows like it wants to take over the world.

      Ha! Yes…just the tiniest bit of red! I was hoping for full red as well but will settle for a splash of it since it tastes so incredibly yummy despite (or maybe because of) it’s green hue 🙂

    well that is a nice harvest. I haven’t tried rhubarb yet, maybe some day. Actually I’m pretty happy to wait for things to finish going to seed; otherwise I would have too much to do all at once and be overworked and overwhelmed….

    Its always exciting harvesting the 1st of the crop, your rhubarb looks great and no doubt you will have more to pick and enjoy over the summer months. I love it stewed with a little apple and then on top of my cereal with a dollop of yoghurt.

      Oh…yummy! That sounds absolutely delicious! I’m continually amazed to see all the different things that people create with the same fruit or veggie! Have you ever canned your rhubarb and apple “stew”? Sounds like something that would be divine in the middle of winter!

    Congratulations on the rhubarb harvest! I think I may need to divide my rhubarb plants this coming fall as they are looking crowded. They do like root room which explains why your plant is so much happier in the ground rather than in the pot.

    A rhubarb galette sounds amazing. I have only had savory ones, and they were delicious! I bet a sweet one would be to die for.

      Oh….it is! We just ate some more as a mid-afternoon snack and it was even better than last night!
