Pancakes for Breakfast

Who doesn’t like pancakes for breakfast?  Right!  However, they take time to make and who has time in the middle of the week to make pancakes?  Not me, that’s for sure.  So, instead, I make an extra big batch on the weekend and then freeze them.  All you have to do is pull a couple out of the freezer, plop them in the microwave for a couple of minutes and, just like magic, you have an instant, yummy breakfast!

I like my pancakes with bananas, pecans and shredded coconut and will keep playing with the addition of maple syrup cooked into the pancakes for a little added sweetness 🙂

      Ooohhh…lemon juice and sugar? I never would have thought about lemon juice! I will definitely try it!
